The 2007 vintage was excellent for Napa Valley. The season started out 2 to 3 weeks ahead of schedule, partly due to a warm, dry winter and spring. The weather cooled mid-summer to lengthen the growing season. Clusters and berry size was small. The dry season helped to create very intense fruit.

| Production Notes | The grapes for the 2007 Philary Vyd. Syrah were harvested in mid-September. They were hand picked into small bins in the early morning hours. The grapes were then pitch-forked into the destemmer and were 100% destemmed. The grapes were then placed into upright barrels with their heads removed for fermentation. A cold maceration around 45 degrees lasted for 3 days, before the native yeasts finally started to become active. Once fermentation commenced, the must was punched down twice per day allowing for a gentler color extraction and oxygen incursion. After a 22 month cepage in 100% new French oak, the wine was bottled unfined, unfiltered. |
