2007 “Philary Vineyard” Syrah
3 In Stock
The 2007 vintage was excellent for Napa Valley. The season started out 2 to 3 weeks ahead of schedule, partly due to a warm, dry winter and spring. The weather cooled mid-summer to lengthen the growing season. Clusters and berry size was small. The dry season helped to create very intense fruit.

Production Notes
The grapes for the 2007 Philary Vyd. Syrah were harvested in mid-September. They were hand picked into small bins in the early morning hours. The grapes were then pitch-forked into the destemmer and were 100% destemmed. The grapes were then placed into upright barrels with their heads removed for fermentation. A cold maceration around 45 degrees lasted for 3 days, before the native yeasts finally started to become active. Once fermentation commenced, the must was punched down twice per day allowing for a gentler color extraction and oxygen incursion. After a 22 month cepage in 100% new French oak, the wine was bottled unfined, unfiltered.
